Valentine’s Cookies

When there is a good excuse to decorate cookies, count me in.  I used a basic roll cookie recipe that I found in The Joy of Cooking. My grandmother had two copies and sent me one of them. Apparently it belonged to her sister. I love that it’s been passed down in the family and every so often, I uncover little notes that my great aunt left to herself about a recipe. The icing is store bought decorative icing. Whats your favorite Valentine’s greeting?

Roll Cookies

Cream:

1/2 cup white or brown sugar

With:

1/2 cup butter

Beat in:

1 tsp vanilla

2 eggs

2 1/2 cup sifted all purpose flour

2 tsp double acting baking powder

1/2 tsp salt

Chill dough 3-4 hours, preheat oven to 375 ° f. Roll and cut cookies. Bake 7-12 minutes. picture2life_60189_original
