I came up with this recipe while trying to make dinner with what little I had in my cupboard. A fancier twist on mac n cheese.
What you need:
1 box pasta, cooked
3 tablespoons olive oil
1 yellow onion diced
1 head garlic diced
1/4 cup sun dried tomato diced
2 tablespoon flour
2 cups whole milk
2 teaspoons oregano
2 teaspoons basil
2 cups cheddar cheese
1 teaspoon Cayenne (optional, but I like the little kick it gives)
1 teaspoon salt
1 tablespoon black pepper
In a pan, heat 1 tablespoon olive oil over medium. Add onions. When the onions start to sweat, turn the heat to low and add garlic. Stir and let caramelize about 10 minutes. Then add the sun dried tomatoes. In a pot, start making the sauce, a modified béchamel. 2 tablespoon olive oil whisked together with 2 tablespoons flour. Let cook over medium heat until the sauce starts to turn golden. Add milk and whisk. Cook until the sauce thickens, 1-2 minutes, and add oregano, basil, salt, pepper, cayenne, and cheese. Add the onion mix to the sauce and let flavors infuse for about 5 minutes. Pour cooked pasta into the pot, mix, and serve.
For a variation, place in a baking pan, cover with bread crumbs, and cook for 25 minutes on 350.

I jazzed up my mac and cheese with sauteed mushrooms and broccoli last night! I love caramelized onions so I will definitely be adding those next time.
I don’t think I’ll ever make a Kraft mac & cheese dinner again! This sounds so good! I never thought to add caramelized onions!!! Yum!! =)
