Munchie Monday: Zucchini Crisps
I tried this delicious snack a few months ago and fell in love. My boyfriend grabbed them off the plate faster than I could put them on. They are a must try!
3 large zucchinis
2 tablespoons olive oil
1/3 cup grated parmesan cheese
1/3 cup bread crumbs
salt and pepper to taste
Spray cooking spray on a baking sheet and preheat oven to 450˚F. Using a peeler, peel stripes along the outside of the zucchini, lengthwise, spacing the stripes evenly. Then, slice the zucchini into quarter inch thick slices. Throw slices into a bowl and coat with olive oil. In a separate bowl, combine the dry ingredients. One by one, press each zucchini slice into the dry ingredients, coating both sides. Place on the baking sheet and bake for 25 minutes, until browned and crisp. Serve hot.
Note: I made my bread crumbs out of a multigrain bread which added a hint of sweetness to the crisps.
